I’m writing this from our spot in Kotla Mubarakpur, specifically over at C-110 in the Khrishna Kali area. We are the ones working as crew members at the Slice of Italy restaurant around here. It’s a busy life, honestly. The kitchen is always hot, and there is always a stack of orders waiting to be made. Kotla is a tight neighborhood, so things feel very close-knit. You see the same faces every day, people stopping by for a quick bite or ordering a pizza for their family dinner. We spend most of our shift on our feet, making sure the dough is right and the toppings are fresh. It isn't a glamorous job, but it's real work. The restaurant floor gets pretty hectic during the dinner rush, and sometimes the air conditioning can't quite keep up with the heat from the ovens. We all just pitch in and help each other out when things get crazy. When it rains, the street outside gets a bit muddy, but the customers still come in. We don't have fancy titles or big offices. We wear our uniforms, do our hours, and try to make sure every pizza that goes out is decent. It’s about being part of the local food scene and making sure people in the area have something good to eat after a long day of work. That’s pretty much our daily reality here.
