Our restaurant is located at WZ 74 in New Delhi. It’s an interesting setup because of the connection to Oman, but here in Delhi, it’s all about the daily kitchen rush. The space isn't very large, so things can get pretty cramped when the lunch crowd starts coming in. You can usually smell the spices and the frying as soon as you turn the corner onto the street. We start early in the morning, chopping vegetables and getting the batters ready. It’s a lot of manual work. The floors are often a bit damp from cleaning, and there is always the sound of clinking plates and shouting orders. We don't have fancy menus with photos; it's just the food we know how to make well. Most of the people who eat here are locals who live or work nearby and just want a quick, filling meal. The seating is basic wooden chairs and tables that we’ve had for a long time. We don't really do the whole fine-dining thing with cloth napkins and fancy lights. It’s more about getting the food out hot and making sure the orders don't get mixed up. Sometimes we run out of certain items by the evening, and we just have to tell people to come back tomorrow. It’s a busy, noisy, and somewhat messy place, but it’s real. We just keep cooking and serving whoever walks through the door at WZ 74.
