Toast Rajagarden, New Delhi

Toast Rajagarden is located at F-1979 in Netajinagar. It’s basically Lalit Kumar’s place, and it’s a fairly simple setup. We don't have a big neon sign or a massive storefront. It’s more of a neighborhood spot where we handle our food business. The name might sound fancy to some, but it’s really just about the daily work we put in. The kitchen area takes up most of the space because that’s where everything happens. We spend a lot of time prepping ingredients and making sure everything is ready for the day's orders. It’s not a corporate kitchen with stainless steel everywhere; it feels more like a home kitchen that’s been expanded to handle more work. We don't have a lot of staff, so everyone does a bit of everything, from cleaning to cooking. Netajinagar is a busy area, and we fit right into the middle of it. We aren't trying to win any awards or be the top-rated place in some magazine. We just want to make decent food that people enjoy eating. Some days are better than others, and things don't always go perfectly, but we show up and do the work anyway. It’s a local business run by local people who just want to keep things moving. We’ve been here for a while and the routine is what keeps us going. There's always something to be done in the kitchen.
