The Kitchen,Khan Market,New Delhi

Even though the name says Khan Market, our actual workspace is located at F8, Gali Number 3 in Pandav Nagar, over in Mayur Vihar Phase 1. It is a bit of a tucked-away spot in the lane. This is where all the cooking and prep work happens every day. It is a real kitchen, so it gets hot and loud with the sounds of pots clanking and fans running. We aren't a sit-down restaurant with fancy tablecloths. Most of what we do is preparing food to be sent out or picked up. The mornings are usually the busiest when the fresh supplies arrive and we have to start chopping vegetables. The floor can get a bit slippery and it’s always crowded with boxes of ingredients. We have a small team of cooks who have been working together for a while now. We don't use any fancy industrial machines, just regular stoves and ovens. Sometimes we run out of something and have to send someone to the local market quickly. It is honest work and we stay pretty busy from morning until late at night. The neighborhood is tight and we know many of the people living in the nearby houses. We just focus on getting the food right and making sure it goes out on time. It is a noisy, busy place but we like it that way. We just keep our heads down and cook what people enjoy eating.
