The Haveli

The Haveli is located on Gazni Road, right by the Beg Center in Roorkee. It’s a place that has seen a lot of people come and go over the years. The building has that old feeling to it, which we kind of like even if it means some of the doors creak a bit. We spend a lot of time in the kitchen or out front talking to whoever walks in. Roorkee is a quiet enough town compared to the big cities, but Gazni Road gets its fair share of traffic. We have some heavy tables and chairs that have been here forever. Sometimes the power goes out and we have to find the torches, but that’s common enough around here. We don't do anything too complicated. We just cook what needs cooking and make sure the place is open when it’s supposed to be. You won't find any slick suits or corporate talk here. We are just regular people wearing aprons and trying to keep the dust off the counters. The morning air is nice before the trucks start rolling by. We usually have a bit of a rush around lunch and dinner. Between those times, we sit out back for a bit of a break. It is a simple way of running things, but it works for us and the people who live in this part of Roorkee. It’s just how we do things here day after day.
