The Great Kabab Factory

We’re tucked away at H.No. 128 in Gali No. 13, right in the middle of Village Karkardooma. It’s a bit of a trek for some, but once people find us near P.O. Shakarpur, they usually come back. The kitchen gets really hot, especially when the grills are going full blast. We spend most of our time prepping ingredients and making sure the meat is just right. There’s a lot of smoke and noise, but that’s just how a kitchen like this works. Being in a village area means the streets are narrow and it can get pretty crowded during the dinner rush. We don't have a big fancy entrance, just a door that leads to where the food is made. We’ve been here in Delhi 110092 for a while now, and the neighbors are used to the smells coming from our place. It’s hard work, and sometimes things get a bit chaotic when too many orders come in at once. We don’t use any fancy systems, just paper and pens to keep track of what needs to go out. The staff is mostly local guys who know the area well. We don't try to be anything we aren't; we just cook and serve what we know. If the power goes out, which happens sometimes, we just light some candles and keep going. It’s a very practical way of doing things, focusing on the food and not much else. It keeps us grounded and busy.
