The Great Kabab Factory', (Rhw).

The Great Kabab Factory is situated in Subroto Park, which is a bit of a unique area in New Delhi. It’s near the military zones and the airport, so it feels a bit different than the crowded markets in the city. We are part of the RHW group. The kitchen here is always hot and smells like grilled meat and spices. That’s because we are constantly cooking kababs over open flames. It’s a busy place, especially in the evenings when people come in for dinner. The staff wears uniforms, but behind the scenes in the kitchen, it’s a lot of sweating and rushing around to get the skewers ready. We have a lot of big heavy tandoors and grills that need constant attention. Working here means you go home smelling like smoke every night. We don't really do much advertising; people just know we are here in Subroto Park. The seating area is kept as nice as we can, but the real work happens in the back where the prep is done. We chop a lot of onions and marinate meat for hours every single morning. Sometimes things get hectic when a large group shows up without a reservation, but we manage to get the food out. It’s a lot of repetitive work, making the same recipes over and over to keep things consistent. It’s a solid job and we take pride in the food we put out. It's hard work but keeps us busy.
