The Great Kabab Factory, Noida

So, we have our spot at House No-161 C. It’s on the second floor of the LIG Flats in Jasola Vihar. Even though the name of the place says Noida, we’re actually right here in New Delhi 110044. It’s a busy residential area. You can hear the neighborhood sounds all day long through the windows. We deal with the food side of things. It gets pretty warm in the kitchen area during the lunch rush. We aren't a massive corporate chain office; it’s more of a local operation for us. The flats around here are all similar, so people sometimes get lost finding the right block. We just tell them to look for 161 C and head up. It’s a practical space. We spend a lot of time prepping ingredients and making sure everything tastes right. It’s hard work, honestly. We don't have any fancy decorations, just the tools we need to get the job done. The staff is mostly local folks from the area. We keep it simple and just try to get the kababs out to everyone who wants them. It's a decent place to work. We have a small team and we all know our roles. Sometimes the traffic in Jasola Vihar makes it hard for people to visit us, but we stay busy regardless. We just focus on the cooking and the orders. It’s a lot of work but we like it.
