The Bonsai Eastern Grill & Bar,The Corus Hotel

We are located at C-94 in the B.K. Dutt Colony, right over by Jor Bagh Lane. This is where we run The Bonsai Eastern Grill & Bar, which is connected to The Corus Hotel stuff. Being in the Lodhi Road area of New Delhi, we are in a fairly central part of town. It is a nice spot because of all the history and the greenery around, but our daily work is mostly about the grill and the bar. We spend a lot of time getting the kitchen ready and making sure the drinks are stocked. The grill can get pretty smoky when we are busy, but that is just part of the job. B.K. Dutt Colony has its own vibe, and we have become a regular part of it over time. We do not try to be something we are not. We just open up, fire up the grill, and wait for people to come in. It is a lot of standing on your feet and making sure the orders are correct. The staff is a small group and we have worked together for a good bit now. Sometimes we sit out in the colony area when the shift is over just to cool down. It is a simple business at the end of the day, just food and drinks in a good location. We just like to keep things moving.
