We are over at Parijat Apartment, A-37, right in West Enclave Pitam Pura. If you know the Outer Ring Road in Delhi, you know how busy it gets around here. Our spot is basically where all the catering coordination happens for the flights. It is not some fancy corporate headquarters with glass walls. It is a working office where we deal with the kitchen schedules and making sure the food gets to the airport on time. Most of us have been working here for a while, and we just focus on getting the daily lists done. The morning starts early because the flights don't wait for anyone. Sometimes the traffic on the Ring Road makes things a bit tight, but we manage. We aren’t trying to be the biggest or anything, we just want to make sure the boxes are packed right and the trucks leave when they are supposed to. It is a lot of looking at spreadsheets and talking to the chefs in the back. There’s usually a bit of noise from the street, and someone is always making tea in the small corner. We just do our thing every day, keeping track of what goes on the planes. It’s mostly about logistics and not making mistakes with the orders. We’ve been at this address for a bit now and the neighbors know us. It’s just how we run things here. There is no point in making it sound more complicated than it really is.
