Taj Sats Air Catering

We are over at Taj Sats Air Catering, located at 116, Galli No.1 in Rameshwar Nagar, which is part of the Azadpur area in Delhi. If you know Delhi - 33, you know it is a very busy place, especially with the big fruit and vegetable market nearby. Our setup here is all about getting food ready for the planes that fly out of the airport. It is a lot of hard work and the kitchen is always going. Galli No.1 is a tight street and we have to manage the space carefully when deliveries come in. Rameshwar Nagar is a crowded neighborhood but that is just how Azadpur is these days. There are always trucks moving and people carrying heavy crates. We start very early in the morning when most people are still sleeping because the flights do not wait for anyone to catch up. The building at 116 is where we do most of the prep work. It is not a shiny office; it is a working kitchen with big pots and lots of people in aprons. Sometimes it gets really hot in there, especially in the summer months when the sun is beating down on the roof. We focus on getting the trays packed and out the door on time. Everybody has a specific job to do, whether it is chopping fresh vegetables or packing the little salt and pepper packets. It is a gritty, hardworking environment and we just focus on the tasks in front of us. Azadpur is a noisy place but you get used to the sounds after working here for a while.
