We are over in Vasant Kunj, specifically near Kishangarh. Our work is mostly about the food that goes on the planes. It’s a bit of a weird job if you think about it, cooking for people who are thousands of feet in the air. The kitchen starts early, way before the sun is even up. We have to get the trays packed and the trucks ready. Flat number 7 is where things get organized. It isn't always glamorous. There is a lot of chopping, cleaning, and packing. We have to be careful with the timing because the planes won’t wait for us. If the traffic in New Delhi is bad, we start feeling the pressure. Our team is a mix of old-timers and some newer folks. We’ve got a routine down, though. One person handles the snacks, another does the main meals. We don’t spend much time sitting down. The air catering business is constant. Even when it’s quiet, we are prepping for the next day. Sometimes we get to try the food ourselves, which is a nice perk. It’s a practical kind of place. We don’t have a lot of time for fancy talk. Just making sure the food is ready and loaded is what we do. We share a few jokes in the kitchen to keep the mood light. It's a tight space but we make it work somehow. We've been at 101/7 for a long time. It is hard work but it keeps us going.
