Down on Shri Ram Road in Civil Lines, we have our setup at 11 A/34-A. It’s a quieter part of Delhi compared to the markets, with lots of old trees and big houses. We are mostly focused on the food side of things for the planes. It’s a lot of work that happens behind the scenes. People see the meals on their trays when they fly, but they don’t see us checking the lists and packing the crates in the early hours of the morning. The office is busy, and there’s always a smell of something being cooked or prepared nearby. We have schedules stuck all over the walls. If a flight is delayed, everything changes, and we have to scramble to adjust the timings. It’s not a relaxed job. The chairs in the office are those old wooden ones that creak when you sit down. We use a lot of clipboards. It feels a bit old-fashioned sometimes, but in the catering business, you need to have things written down. The delivery vans come and go through the gate all day and night. We have a small break room where we drink way too much coffee to stay awake during the long night shifts. It’s not a fancy corporate headquarters. It’s a working building where things actually happen. We’re just a bunch of people making sure the food gets where it needs to go on time for the passengers.
