Ltd.(Ai) is the full name on the papers. We’ve got a spot that isn’t too hard to find once you get into the main area of Lado Sarai. The building is just a regular one, nothing that stands out too much from the outside. Inside, we just have our kitchen and the area where we get things ready. It gets pretty busy around lunch and dinner time. We aren’t trying to be the most famous place in the city, we just want to make sure the food is okay and the kitchen is clean. The staff here are mostly local guys who live nearby. We talk a lot about the daily orders and what needs to be fixed. Sometimes the sink leaks or we need a new lightbulb, just normal stuff. Lado Sarai has a lot of history, and you can feel it when you walk through the narrow parts. We like being in this neighborhood because it feels alive. There’s always someone walking by or a delivery bike parked out front. We keep the doors open and just do our thing without making a big fuss about it.
