I handle the food and beverage side of things over here at the SRM Hotel. Our office is located at Plot 88 in EVP Prabhu Avenue, which is down the Iind Main Road in Kulathuvanchery. Being out here in Bharaniputtor means we are a bit away from the main city noise, but the kitchen is never quiet. It is a lot of coordinating between the cooks and the guys who deliver the supplies every morning. We have a lot of stuff to keep track of every day, from the crates of vegetables arriving at dawn to the inventory in the pantry. Iyappanthangal gets quite humid, so we are always checking on the cold storage to make sure everything stays fresh. It is a busy role and I don't get much time to sit in a fancy chair. Most of my day is spent on my feet in the halls or near the loading area. The address is a bit of a mouthful for the delivery drivers sometimes, but they eventually find the gate. We are just a group of people trying to make sure the meals are ready when they are supposed to be. There isn't any secret to it, just waking up early and making sure the stove is lit. It is tough work, but it feels good when the dining hall is full and everything is moving smoothly without any major disasters in the kitchen or the storage rooms.
