If you happen to be walking around Chirag Delhi and head toward house number 512, you will probably smell the smoke before you even see our sign. That is just how things are at Smoke Huse Grill. We spend most of our day getting the grill ready and making sure the coal is at the right temperature. It is a bit of a tight space in here, but it works for what we need to do. We started this place because we just liked the way food tastes when it is cooked over an open flame. It is not a five-star setup with white tablecloths or fancy waiters. It is more of a spot where you just come to eat and maybe get a little bit of ash on your sleeve if the wind blows the wrong way. Chirag Delhi is a crowded neighborhood, so things can get pretty loud and hectic during the dinner rush. We mostly just focus on the heat and the meat. Sometimes we run out of certain items earlier than we wanted to, which is annoying, but we would rather do that than serve something that is not fresh. The kitchen gets really hot, especially during the summer months, but we are all pretty used to it by now. It is just a handful of us working here, trying to keep the grill going and the orders moving along. We do not have a big fancy menu. (250 words)
