Slice Of Italy

We’re over at 724 Devli Village in New Delhi. It’s not in one of those big malls, but right here in the village area. The kitchen stays pretty hot most of the day because of the ovens. We spend a lot of time chopping vegetables and getting the dough ready for the pizzas. It’s a lot of manual work. You can usually smell the bread and the sauce from down the street. We have a few tables, but a lot of what we do is just packing boxes for people who want to eat at home. The street outside can get pretty cramped with bikes and cars, so our delivery guys have to be quick. We don't use any fancy language to describe what we do. We just make the food, clean the counters, and try to keep the fridge stocked. Sometimes we run out of something and have to run to the local market to grab more supplies. It’s a busy life here in Devli. Most of us have been working together for a while now, so we have a good rhythm in the kitchen even when it’s chaotic. We aren't a big corporate chain, just a local spot where the staff knows most of the regulars by their first names. It’s hard work, but we like the pace. We just focus on getting the orders out as fast as we can.
