We are located at 91819 B.K.S. Marg in New Delhi. The shop isn't huge, but it's where we spend most of our waking hours. If you walk in, you’ll probably smell the dough and the sauce before you see anything else. Delhi is a fast place, especially around the 110001 area, but inside here, we try to keep things focused on the food we make. The ovens are always hot, which is great in the winter but a bit much during those July heatwaves. We’ve got flour on our aprons most of the time. We don't have a lot of fancy decorations on the walls because we're more concerned with what’s coming out of the kitchen. Our tables are simple, and the floor gets swept a dozen times a day because people are always coming and going. We see all sorts of folks from the Marg—office workers in a hurry, families on the weekend, and students looking for a quick bite. It’s a bit chaotic when the dinner rush hits, but we managed to find a rhythm over the years. We aren't trying to be the most modern place in town. We just want to make sure the crust is right and the toppings are fresh. Sometimes we run out of specific things if the delivery truck is late, and we just have to tell people the truth. It’s a real kitchen with real people doing their best in the heat.
