We are tucked away in Mantola, which is part of the Paharganj area in New Delhi. If you’ve ever walked through these narrow lanes, you know how crowded it gets. Our place is at 505. It’s not a very big space, but we make it work. Most of the day is spent in the kitchen area. The smell of dough and sauces is pretty much stuck in the walls now. Paharganj is a hectic place with travelers and locals always rushing by. We see a lot of different faces every day. It’s a bit messy sometimes, especially when we have a lot of orders coming in at once and the space feels even smaller than it is. We don't have fancy furniture or expensive decorations. It's just a practical spot where we get the cooking done. The plumbing can be a bit old because the building is old, but we manage to keep things running. We’ve been here at this address for a bit now. Most people find us by word of mouth or by just stumbling upon us while walking through the market. It gets very hot in the summer with the ovens going, so we try to keep the fans running full blast. It’s hard work, standing on your feet all day, but it’s what we do. It’s just a small shop in a very busy part of the city. We try to keep it simple and stay focused on the kitchen.
