We handle a lot of the planning and paperwork from here. The actual cooking happens elsewhere in bigger kitchens, but the heart of the operation is right here in this apartment. Most days are spent coordinating menus and talking to suppliers. It is a lot of back-and-forth on the phone. The office is not anything special to look at. Stacks of folders are everywhere and a few photos of food hang on the walls. We are a small team, and we have all been working together for a long time, so we know how each other works. Gharondha Apartment is a quiet enough place, which is nice when we have to focus on the numbers. Marketing budgets and polished websites aren't things we have. We mostly get our work through word of mouth and staying consistent. Sometimes we have samples brought in, which is the best part of the day. Being the fanciest caterers in India isn't the goal, just doing the job right and on time. It is a lot of stress during the busy season, but we manage to get through it. This is just a normal job for us, really. It keeps the bills paid and our minds busy.
