We are over at number 64 in Sant Nagar, right near East of Kailash. Most people know us for the gelato. It’s a busy little spot in New Delhi. We spend a lot of our time dealing with the freezers and making sure the flavors are right. It’s not a huge factory or anything, just our place where we handle the food side of things. The floor is usually a bit cold because of the cooling units. We have a small team here. Everyone does a bit of everything, from moving boxes to checking the ingredients. We start the machines early, usually before the sun is fully up. The hum of the compressors is the background music for our whole day. We keep the delivery bikes parked right outside, and sometimes they block the narrow path, which makes the neighbors a bit grumpy. We just move them and carry on. It gets sticky sometimes when we are mixing stuff, but that’s part of the job. Sant Nagar is a crowded place so there’s always something happening outside our door. We hear the honking and the people talking all day long. We don't have a big marketing department or anyone in suits. We just wear our aprons and get to work. Sometimes we try out a new flavor and everyone in the back gets to taste it first. Some work, some don't. We just keep going. It’s a lot of manual work, lifting and cleaning. It feels good to get things done.
