Our kitchen is tucked away in Aya Nagar Extension, specifically in Phase-6. If you know G-89/A, you know it is a busy spot with a lot of people moving around. Every day starts very early for us, long before the sun is really up. We get the big burners going and start chopping up all the vegetables for the day. It gets pretty hot in the back, especially during the summer months when the air is still. There are always crates of onions and potatoes piled up near the back door. We spend a lot of time checking our lists for the weddings and parties we have to cover. The delivery vans are parked right outside, waiting to be loaded up with the big silver serving dishes and gas cylinders. Sometimes the traffic in Aya Nagar is a complete nightmare, so we have to leave much earlier than we want to just to be on time. It is noisy work, with all the clanking of heavy spoons and the staff shouting to be heard over the fans. We do not really do anything fancy here. We just cook the food that people ask for. It is honest work. The floor is usually a bit wet from the constant cleaning, and there is always a strong smell of spices in the air that never really goes away. We have been in this spot for some time now and the locals know who we are. We just keep our heads down.
