So, we’re over here at 77 Palika Gram in the NDMC flats area. If you know Laxmi Bai Nagar, you know it’s a specific kind of spot in New Delhi. Most days starts with just getting the ovens going and checking on the dough. It gets hot in the kitchen, especially when the Delhi summer is hitting hard outside. We aren’t a fancy corporate office or anything like that, just a place where the staff shows up, pulls on their aprons, and gets to work. The address is 110023, and it’s a pretty busy corner of the city if you think about it. People come in and out, some are regulars from the flats nearby, and others are just passing through the neighborhood. We spend a lot of time just cleaning counters and making sure everything is where it should be. Sometimes the delivery bikes are lined up outside, and it gets a bit chaotic, but that’s just how it goes. There isn’t much to say about us besides we’re here every day doing what we do. It’s not a complicated setup. We just keep the lights on and the food moving. The building itself is pretty standard for Laxmi Bai Nagar, nothing too flashy, just a solid place to work. We’ve been here for a while now, and we’ve gotten used to the rhythm of the street and the people who live around the NDMC flats. It’s a job, and we try to do it right.
