Started around 10 am today at H.No.A 1/A. The Yellow Chilli sign needed a wipe down because of all the New Delhi dust that settles overnight. Being here in 110091, you get used to the noise from the street. It’s just how it is. We spend a lot of time in the kitchen making sure the stoves are ready. Sanjeev Kapoor’S name is on the front, but we are the ones inside chopping onions and making sure the tables aren't wobbly. People come in hungry and we try to get the food out fast. The chairs have some scuffs on them now from people moving them around so much. Sometimes the delivery guys are waiting in a bunch by the door and it gets a bit crowded. We have this one light in the back that flickers if the AC is on high, but it’s fine. We’ve been at this spot for a while now. The floors get mopped twice a day but by evening they look like a hundred people walked over them, which they have. It isn't fancy behind the scenes. There are stacks of napkins and heavy pans everywhere. We just try to keep things moving so everyone gets their meal. It’s hard work, especially when it’s hot outside, but we’re used to the heat from the burners. Most days go by in a blur of orders and washing up. We just keep going until the shutters go down at night.
