Ruby Tuesday

You can find us at A-49 in Mansa Ram Park, right there in Uttam Nagar. It’s a lively part of New Delhi and there’s always something happening right outside our door. Inside, it’s a mix of kitchen sounds and people talking. We spend a lot of time prepping ingredients and making sure the tables are set up right before the lunch rush starts. It’s not a giant place, so it gets warm and a bit crowded when everyone comes in at once. The floor has some scuffs from the chairs moving around, and the menu boards have been written on and wiped off so many times you can still see the shadows of old prices. We don't have a big team of fancy chefs, just people who know how to cook and like being in the kitchen. Cleaning up takes forever at night, but that’s just how it is. We see a lot of the same faces every week, which is nice. It makes the place feel more like a part of the neighborhood. The noise from the Uttam Nagar traffic is always there, but you get used to it after a few days. We don't do anything too complicated. We just open the doors, get the stove going, and stay busy until the lights go out. It’s a lot of hard work and staying on your feet, but it keeps us going in this busy part of the city everyday.
