Ruby Tuesday

This place is located at F-519 in Karampura. It is an older building, and we have been operating here for a while now. Most of the people who work here live in the surrounding New Delhi neighborhoods, so it really feels like a local spot. We do a lot of the prep work and the general management from this specific office. It is not a fancy restaurant space itself, but more of a hub where we handle the logistics and the daily chores of running a food business. The back room is filled with crates and some old menus we have not thrown away yet. There is a kitchen smell that lingers because of the cooking we do, which is actually quite nice most of the time. We have a couple of small tables where we sit to go over the inventory and the staff schedules for the week. It gets a bit crowded during the lunch hour when everyone is trying to get things ready for the rush. The floor gets a bit slippery if we are not careful with the cleaning, so we are always mopping. We do not have a big corporate team; it is just us trying to make sure the food is good and the orders go out on time. Sometimes the fridge makes a weird humming noise, but we just ignore it. It is a busy and loud environment, but we have gotten used to the chaos.
