Republic Of Chicken

We are tucked away in Sher Singh Bazaar. If you know Kotla Mubarakpur, you know how packed the streets get, especially around our spot at 1742/2. It’s a bit of a maze to get here if you aren’t used to South-Ext Delhi-3. We spend our mornings getting things ready while the market is still waking up. The shutters go up early and the noise starts almost immediately. It’s not a quiet place to work but we like the energy. There is always someone shouting or a bike honking right outside the door. Inside, it’s just the usual setup for Republic Of Chicken. We have our routine. Most of the guys here have been around for a long time. We drink a lot of tea while we handle the orders. Sometimes the humidity in Delhi makes it tough, but we have the fans going. The address sounds complicated but once you find the main bazaar it’s pretty easy to spot us. We don’t have fancy decorations or anything. It is a practical space for what we do. The walls could probably use a new coat of paint, but we are too busy to get to it. People from the neighborhood drop by just to say hello sometimes. It’s just a regular local business life. We stay until the evening when the market starts to wind down. By then, everyone is tired but we get the cleaning done and head home.
