Punjabi By Nature ,Basant Lok, Basant Bihar(A Unit Of A.R. Fishr

We are located over at 198/2 in Basant Gaon, right near the Bank of Baroda in New Delhi. This place is part of the A.R. Fishr unit. It’s a busy kitchen and a dining area that stays noisy most of the day. You can hear the pans clattering and the chefs shouting orders back and forth. We’re not in one of those shiny malls; we’re right here in the village area where things are a bit more grounded. The floors get a bit slippery and the air smells like spices and smoke. It’s a lot of hard work in the back to get the food out to the tables. We’ve got our regulars who come in and know exactly what they want without looking at a menu. The building itself is nothing special, just a sturdy brick place near the bank. We deal with the delivery drivers coming in and out all the time too. It gets hot in the summers, especially near the tandoors. We just keep the fans going and keep moving. It’s not a scripted experience or a fancy corporate setup. It’s just a restaurant where we cook food that we know people like. Sometimes we run out of things or a delivery is late, but we manage. It’s just real life in a Delhi kitchen. We keep the doors open and the stove hot from morning until night.
