Pizza Hutt

Our little pizza place is tucked away in Ghitorni, right on the Mehrauli-Gurgaon Road. The address is a bit long because it’s tied to the family name, Faizan Khan’s place, but everyone just knows the spot near the main road. It gets really busy here in the evenings. You have people coming home from work in Gurgaon, stopping by because they are too tired to cook or just want something hot to eat. We spend a lot of time by the oven. The heat from it is something you get used to after a while. It’s not a huge place, but we have enough room to get the dough ready and top the pizzas with whatever is fresh that day. New Delhi can be a hectic place to live, especially with all the traffic on the MG Road right outside our door. Sometimes the delivery guys have a hard time getting through the jams, but they know all the back alleys by now. We use a lot of flour every day. My hands usually have a bit of it on them even when I’m done for the shift. We don’t have those big corporate meetings or anything. We just talk about what we need to buy from the market and who is working the late shift. It’s a local business through and through. The neighbors stop in for a slice and a chat. We see the same faces every week, which is nice. It makes the long hours feel a bit shorter when you know the people you’re feeding and they know you.
