We are located at F 337 on the second floor in Lado Sarai, Mehrauli. It’s a busy spot in New Delhi, especially in the evenings when everyone is out looking for something to eat. This Pizza Hut is right in the thick of things. You can smell the dough baking from the street if the wind is blowing the right way. The stairs up to the second floor are a bit steep, so we see the delivery riders running up and down them all day long. It’s a small kitchen compared to some others, but we manage to stay busy. The tiles on the floor are a bit worn down from all the walking back and forth between the ovens and the prep tables. We don't have much of a view from the windows, just the rooftops of Lado Sarai and the traffic moving slowly below. Sometimes it gets really loud when the rush starts and everyone is shouting orders, but we have a good rhythm going. We use a lot of flour every day, and it seems to get on everything no matter how much we clean. It’s not a fancy dining room with white tablecloths, just a place for people to grab a slice or wait for their take-away. We’ve been here for a while and the locals know exactly where to find us when they don't feel like cooking at home. It’s hard work and the heat from the ovens is real.
