This is the Pizza Hut on the ground floor of 12/24 in East Patel Nagar. Manish Singh is around here a lot, making sure things don't go off the rails. The kitchen is always warm because the ovens never really get a chance to cool down. We spend our shifts stretching dough and making sure the toppings don't run out. It gets really loud when the lunch rush starts, and everyone is shouting orders back and forth. East Patel Nagar is a lively place, so there's always someone walking by the window. We’ve had the same delivery bikes parked outside for years, and they’ve seen better days, but they get the job done. Sometimes the flour gets everywhere, even on our shoes, no matter how much we sweep. We aren't some corporate office with suits; we are just guys in aprons trying to get the pizzas out on time. The mop bucket is usually tucked in the corner, and there's always a stack of boxes waiting to be folded. We know most of the regulars by their usual orders. It’s not a perfect science, and sometimes we run out of a certain topping, but we just let people know. We’re just a local spot in the neighborhood where you can hear the traffic and smell the bread baking from the street. There is always something to clean or a phone ringing with a new order.
