Pizza Hut

This Pizza Hut is tucked away in Old Mahavir Nagar, specifically at S2/17. If you know Tilak Nagar, you know it gets crowded. We are right in the thick of it. The ovens are basically always on from the moment we open the shutters. It gets pretty warm in the kitchen, especially during the dinner rush when everyone wants their food at the same time. We have a small team here. Most of us live nearby, so we walk or take a rickshaw to get to the shift. It’s not a huge place, but we manage. We spend a lot of time cleaning floors and wiping down the counters because the dust from the road just drifts in. The delivery bikes are parked out front, and sometimes it’s a struggle to find a spot for them because the lane is so narrow. We don't really do the big corporate talk here. It’s just us making dough, topping pizzas, and trying to get them out the door while they are still hot. Sometimes the printer for the orders jams, and we have to scramble to fix it. It’s a lot of work, and by the end of the night, everyone is pretty tired. But we show up the next day and start it all over again. The neighborhood is loud, the people are usually in a hurry, and we are just here in our corner of Delhi doing what we do. We have this one table near the window that everyone likes because you can watch the street, but mostly it's just people grabbing their orders and leaving.
