Papa Johns,Delhi

Out here in Shalimar Bagh, specifically at Da184, things get pretty busy around dinner time. This is where the Papa Johns in this part of New Delhi operates from. It’s a basic setup in the DA block, and you can usually smell the bread and the sauce from a few doors down. The kitchen area is where most of the action happens, with the ovens running pretty much all day. It gets quite warm in the back, so we usually have the fans going at full speed. The delivery guys are always coming and going, checking their bikes and making sure the boxes are stacked right. We have a small area for people who want to stop by, but a lot of what we do is just handling the orders that come through. The floor often has a bit of flour on it because that’s just how it is when you’re making dough all day. New Delhi - 88 is a residential neighborhood, so we see a lot of the same faces from around the corner. Sometimes the internet acts up and we have to fix the router, or a delivery bike gets a flat tire, which just adds to the regular chaos. It’s not a quiet place, between the phone ringing and the timers going off, but we’re used to it. We keep the counters wiped down and the supplies stocked in the small storage space we have in the back of Da184.
