I opened this place at 1028 Kishan Ganj, right in the middle of Azad Market. If you know Delhi, you know how busy this area gets. There are people everywhere and the noise never really stops. My restaurant isn't big. It's just a small space where I can cook and people can eat. I spent a lot of my savings to get the kitchen set up. The stove is almost always on. I handle the cooking and I have one boy who helps with the cleaning and serving. We don't have a printed menu that looks fancy. I just tell people what we have today. Usually, it's the same few dishes that everyone likes. The walls are a bit stained from the steam, but the food is good. I get my vegetables from the market nearby every morning before the sun comes up. It’s hard work being on your feet all day in the heat. Sometimes customers are in a rush and they get impatient, but mostly they are regulars who live or work nearby. I don't have a big mission. I just want to serve a decent meal and make enough to keep the place running. It’s my own business, so I have to do everything myself. When the day ends, I’m tired but it feels okay. I lock up the shutters and walk home through the crowds.
