We are situated at B-410 in Sarojini Nagar. Most people think of the big market when they hear the name of this area, but we are in our own spot here in New Delhi. The kitchen is always the busiest part of the building. You can hear the pans clanking and the chefs talking over the noise of the exhaust fans. It’s a place where food gets made and drinks are poured every day. The layout is a bit irregular because of the building shape. We have tables set up where people sit and talk for hours. The floors get scuffed up from all the walking, and we are constantly cleaning something. It’s not a quiet place, especially when the evening crowd starts showing up. The staff is usually moving fast to keep up with everything. We don't have a giant neon sign or anything like that. People just find their way to us at B-410. In the mornings, it’s much slower while we prep for the day. We get deliveries of vegetables and crates of supplies through the back. It’s a lot of work to keep the place running. The air inside smells like whatever is being cooked at the moment. It’s a lived-in space that feels like it’s seen a lot of people come and go. We just open the doors and get started every morning. It gets loud and hot but that is how a kitchen is.
