Our spot is over in Vasundhara, Ghaziabad, specifically at house number 666 in Sector 15. It is a residential area mostly, so we see a lot of the same people every single day. The heat in Ghaziabad can be pretty intense in the summer, so we spend a lot of time making sure the fans and coolers are working like they should. We have been part of this neighborhood for quite a while now. The kitchen is usually the loudest part of the building, with the clatter of pots and the smell of spices drifting out into the hallway. We don't have a big team, just enough of us to keep the restaurant going and the hotel side of things in order. It is not like those big places in the middle of Delhi where everything is shiny and perfect. We have some cracks in the tiles and the paint might be peeling in a corner, but it is a real place where real work happens. We get a lot of locals coming in for a quick meal or families staying over when they have a function nearby. It is a practical setup and we don't try to pretend it is anything else. Most of us live close by, so we walk or take a rickshaw to work. We just focus on the day ahead of us and try to get the orders out on time for everyone who visits.
