Mughlai Tandoori Night

You can find us at House No. B/ 80 in Abdul Fazal Enclave II, over in Jamia Nagar. We’ve been part of this neighborhood for a while, and most people around here know the smell of our tandoor when we get it going in the evening. It’s a small operation, mostly focused on the kitchen and getting orders out to people who live nearby. Okhla is a busy place, and things don’t really slow down until very late at night. We spend most of our time hovering over the heat, making sure the coals are just right. It’s not an easy job, especially when the weather is warm, but we enjoy the work and the people we meet. Our staff is just a few guys who have been doing this for a long time. We don't have a big corporate office or anything like that; it’s just us in the kitchen at the enclave. We see a lot of the same faces every week, which is nice. Sometimes we run out of things early if it's a busy Friday, and other nights are a bit quieter when we just clean up and prep for the next day. We keep our space simple and focus on the ovens. It’s just honest work in a busy part of New Delhi where people appreciate a good meal after a long day. No fancy menus or polished waitstaff, just good food and heat.
