We’ve been here in West Enclave for quite some time now. Most people around Pitam Pura know the spot. It isn't a fancy place with golden lights, just a kitchen and some tables where we get things done. In the mornings, the first thing we do is check the vegetables that come in from the market. If the tomatoes aren't good, the whole day feels off. Sometimes the stove acts up or the delivery bikes get stuck in the Delhi traffic, which happens more often than not. We spend a lot of time just making sure the spices are right. It gets hot in the kitchen, especially during the summer months when the fans don't seem to do much. We have a few guys who have been working here for years. They know exactly how the regulars like their tea or which table prefers to sit away from the door. It’s a lot of work, honestly. Cleaning up after the lunch rush takes forever, and then we have to do it all over again for dinner. We don’t have a big marketing team or anything like that. It’s a simple life running a place like this in Delhi, and we keep the floors swept as best as we can between the rushes.
