This particular spot is at House Number 16 in Nangloi Extension-4, right near the Daulat Ram Public School in Delhi. It's a busy neighborhood with kids going to school and people heading to work. Unlike the big shiny restaurants you see in the malls, this location feels more like a part of the local street. We have the usual kitchen setup and a place for people to sit, though it gets crowded during the lunch hour. The staff here are mostly local people from around Nangloi. We spend the day frying potatoes and flipping burgers. It gets pretty hot in the back, especially during the summer months. The floors are always being mopped because people bring in dust from the street. It’s a loud environment with the sound of the fryers and the timers going off constantly. We don't have any fancy speeches about what we do. We just make the food as the orders come in on the screen. Sometimes the supply truck is late and we have to wait around for it to show up. It’s a straightforward job. We see a lot of the same faces every day, mostly students from the school nearby who want a snack. We keep the place running, serve the food, and clean up at the end of the night. It’s hard work and it’s fast, but that’s just how it is in a place like this.
