Liquid Kitchen,Defence Colony

Liquid Kitchen is located right here in Defence Colony, or well, specifically Lajpat Nagar-4 depending on how you look at the map. We are up on the second floor of this old double storey building, Flat H.34. It’s a bit of a climb if you’re carrying things, but you get used to it. The kitchen stays pretty warm most of the day because we’ve always got something on the stove or in the oven. It isn't a big corporate setup, just a regular space where we get things ready. You can hear the sounds from the street coming through the windows while we work. We spend a lot of time washing vegetables and chopping stuff up on the big counters. There’s always a lot of cleaning to do too, which is the part nobody likes but it has to happen. Some days are just a rush to get everything boxed up and sent out, and other days we have time to actually sit down for a minute and have a glass of water. The floor gets a bit slippery sometimes so we have to watch our step. We’ve got some regular people who come by or call us up. It’s just a handful of us working here, trying to stay organized in a small space. New Delhi is loud and busy, but up here on the second floor, we just focus on the food and the timers. It's simple enough. It feels right being in the mix of things in Lajpat.
