So, we are over here at Kumgang Restaurant in Dwarka, specifically at Poc 7 Sec 12. New Delhi is a huge place but our little corner is pretty quiet compared to the main roads. We started this place because we liked the food and noticed there weren't many options like this around here. It is a simple setup with tables and chairs that have seen some use over the years. We don't have a big staff, just a few of us in the kitchen and one person out front mostly. On weekdays, the lunch rush can get a bit hectic because people come in from the nearby offices. We try to keep up, but sometimes the food takes a bit longer when everyone arrives at once. Our menu is printed on plain paper and we change it whenever we feel like trying something new or when ingredients get too expensive at the market. The kitchen is small but we keep it organized. We are not some big chain with fancy uniforms. Most days you'll see us in our regular clothes with an apron on. We spend a lot of our time prepping vegetables and making sure the rice is just right. It is hard work and the heat in the kitchen gets intense during the summer months. But we like seeing the same faces coming back every week. We aren't trying to be anything we're not, just a local spot to eat.
