You can find Koncept Restaurants on Hanuman Road, right across the street from the traffic police station in New Delhi. It is a very busy spot, and the sound of whistles and car horns is pretty much the background noise for our entire day. We operate out of C 16, and it serves as a central hub for all our activities. We spend a lot of time in meetings or on the phone trying to coordinate things for the different food locations. The office is not anything fancy, just a place where we manage the menus, the staff schedules, and all the supplies. Being in the 110001 zip code means we are right in the heart of the city, which is convenient but also very loud and hectic. We have people coming in and out all day, from delivery drivers to different vendors. The small kitchen area in the back is where we usually end up when we are trying out a new recipe idea. It is a lot of hard work and the hours can get long, especially when things get busy in the evenings. We do not really follow a corporate style; it is more about getting the food right and making sure the restaurants have what they need to function. Some days are stressful when a shipment shows up late, but we just deal with it. It is a practical way of running a business, and we have been doing it this way for years.
