Job Trainee Kitchen is tucked away at D-551 in Pul Prahladpur. If you know the Badarpur area of New Delhi, you know how the traffic can get. Our place is usually full of the smell of spices and the sound of big fans whirring in the background. It’s where people come to learn the actual trade of working in a kitchen. We don't have any of those expensive cooking school setups with gleaming silver counters. It’s a real working space. Trainees are always scurrying around with trays or chopping mounds of vegetables. Sometimes the floors get a bit slippery and the heat from the stoves makes everyone a little grumpy by mid-afternoon. We spend a lot of time teaching the basics, like how to handle a knife properly without cutting yourself. It’s loud and it’s messy, but it’s how you actually learn to cook for a crowd. The neighborhood outside is always buzzing with people going to work. We have a small sink in the back that always seems to have a stack of pots waiting. It isn't a glamorous spot, but it’s where the training happens every single day. We drink a lot of water and try to keep the orders moving. It’s just a group of people trying to get better at a hard job in a very busy part of Delhi.
