Our place is located in Shalimar Bagh, specifically at Bk-Ii/32. It’s a decent area in Delhi and we’ve been here for some time now. People around the neighborhood know the spot. It’s not a massive space, but it fits what we need for the kitchen and the seating areas. We spend a lot of time in the back getting things ready before the doors actually open for the day. Usually, the morning starts with deliveries coming in and us checking if everything is fresh and ready to use. The street outside can get pretty cramped with cars and scooters, especially in the evenings when everyone is out for a walk or running errands. We keep the place clean, though it’s a bit old-fashioned in some ways. We don’t have those fancy touch-screens or any high-tech systems, just a pad and pen mostly. The staff is just a few of us who have known each other for years, so we work well together. It’s a lot of manual work, standing on your feet and making sure the tables are wiped down properly. Sometimes we forget to turn the sign on right away, or the fan makes a weird clicking noise, but we just fix it and keep going. Shalimar Bagh has a lot of families, so we see the same faces quite often. It feels normal to see the kids growing up over the years. We just focus on getting the food out and making sure the kitchen stays running without too much trouble. It’s a simple life running a spot like this.
