If you have ever been to Karol Bagh, you know how loud and crowded the streets get every single day. We are tucked away at H-88, right in the thick of all that noise. At the International Institute Of Culinary Arts, the air usually smells like whatever the students are cooking in the kitchens. Some days it is onions frying in a pan, and other days it is something sweet like baking bread or vanilla. It is a tall building and we use several different floors for the classrooms and the cooking stations. The floor tiles are always being scrubbed because things get messy very fast when you are teaching people how to handle food. We have a lot of big steel pots, heavy ovens, and stacks of plates that seem to stay hot all day long. It is a lot of work keeping up with the supplies and the students running around in their white coats and hats. New Delhi 110005 is a hectic place to be, but once you step inside H-88, everything is about the food. We do not have a big fancy lobby with a receptionist. It is more about the practical stuff, like making sure the knives are sharp and the stoves are working. The staff here has been around for a long time, and we all just know what needs to be done. It is a bit noisy with the fans and the chopping, but it is a good kind of busy.
