We run this tiffin service out of Sector 22 in Dwarka, right at the Himaliyan apartments. It started because we noticed so many people around here are too busy to cook a proper meal during the week. Our kitchen gets going pretty early in the morning. You can hear the pressure cookers whistling and smell the spices from the hallway. We don't have a big fancy menu with names you can't pronounce. It’s just the kind of food we eat at home—dal, rotis, some sabzi, and rice. We pack everything into those steel boxes and get them ready for delivery. Plot Number 10 is usually quite busy with our delivery guys coming and going. Sometimes we're running a bit late because the traffic in Delhi is unpredictable, but we do our best to get the food there while it’s still warm. It’s hard work being on your feet all day in a hot kitchen, especially in the summer months. We don't use a lot of oil or heavy stuff because we want people to be able to eat this every day without feeling sick. It’s just honest cooking by real people who care about how the food tastes.
