Great Kabab Factory Of Raddison Hotel

The Great Kabab Factory of Radisson Hotel is located at 69/4 in Tughlakabad, Delhi. Even though we are connected to the Radisson name, the day-to-day life here is all about the heat of the kitchen and the smell of spices. Tughlakabad is an old part of the city, and being based here feels different than being in the middle of a modern shopping district. We have a lot of guys working in the back who have been doing this for years. They don't care about fancy titles; they just care about how the coals are burning and if the meat is ready. The floors are often a bit slippery and the air is always thick with smoke from the grills. It is a loud place to work, with pots clattering and people shouting to be heard over the fans. We spend a lot of time prepping before the first guest even shows up at 69/4. It is a lot of chopping, marinating, and cleaning. We don't really have time for polished speeches or marketing ideas. We are just focused on getting the food right so that when people sit down, they aren't disappointed. It is a tough job and the hours are long, especially on the weekends when the whole of Delhi seems to be out. But at the end of the shift, we just clean up the workstations, lock the doors, and head home to get some rest before we do it all over again tomorrow.
