If you walk down towards 201C/3 in Gobind Puri, you’ll find us over here. We’ve been running Ego Thai out of this spot in Kalka Jee for some time. It’s not a huge place, but the kitchen stays busy enough. We spend most of our mornings getting the ingredients ready and making sure the floors are wiped down before anyone comes in. New Delhi summers are tough in a kitchen, so we usually have the fans going at full speed. Sometimes the delivery bikes out front make a lot of noise, which gets annoying when we’re trying to talk. We don't have a big corporate team or anything like that. It’s just a handful of us making sure the food goes out and the tables stay clean. The neighborhood is always crowded, and parking is a nightmare, so we usually just walk or take a rickshaw. We’ve got some regular customers who live nearby and stop in just to say hello. It’s a simple setup we’ve got going. We write the specials on a board and hope for the best. Sometimes we run out of something and have to run to the local market to grab more. That’s just how it is running a small spot in this part of town. We try to keep things organized but it gets messy when it's busy. We just keep our heads down and keep the stoves lit every day. It's a lot of work but it keeps us going.
