We’re over at 104 Dhirpur in the Nirankari Colony part of Delhi. It’s a regular neighborhood, and our shop is just one of many on the street. We’ve been here serving the local people for a while now. The place is usually full of the smell of baking bread and the sound of the ovens humming all day. It’s not a quiet job. We’re always moving around, getting the dough ready or boxing up orders. The counter is where we see most of our neighbors. We know which families like a lot of toppings and which ones just want something simple for their kids. The floors get a bit messy with flour during the dinner rush, but we try to keep up with it as best as we can. Outside, our delivery guys are always coming and going on their scooters. It’s a busy life, especially on the weekends when everyone wants a night off from cooking. We don't have any fancy decorations, just the usual stuff you need to run a kitchen. Sometimes it gets really hot inside, but we’ve got some fans to keep the air moving. We aren't trying to be anything special, just a place where you can get something to eat without a fuss. We've been a part of this colony for a long time, and we plan to stay here. Most of us live just a short walk away.
