The shop is right there by Kashmiri Gate, and if you’ve ever been through that metro station, you know how wild it gets. We are constantly moving, flipping burgers and bagging fries for people who are in a massive hurry to catch their next train. The address on Bhajanpura is where some of the back-end stuff happens, but the heart of the work is in the kitchen heat. It’s loud, it’s greasy, and it’s usually packed with students or commuters looking for a quick bite. We don’t have time for polished speeches or fancy marketing here. We’re just focused on making sure the orders don’t get messed up when the line is out the door. The staff is mostly young, and we’re all just trying to keep up with the pace. Sometimes the ice cream machine acts up or we run out of napkins, and we just have to scramble to fix it. It’s a lot of standing on your feet and dealing with all sorts of people, some grumpy and some nice. We see thousands of faces every week, and honestly, they all start to blur together after a while. It’s just honest work in a very crowded part of Delhi. We aren't doing anything revolutionary; we’re just serving food as fast as we can in one of the busiest spots in the city. It’s a bit messy, but that is just the nature of the job.
